Simple Grilled Shrimp is a great protein for a “1-2-3 Eat!” meal. Just add a healthy veggie and a healthy starch and you’re set. We originally served this with roasted asparagus and whole wheat dinner rolls.
- 1 lb shrimp large, thawed, and peeled
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp lemon juice
- Place shrimp in a large bowl. Sprinkle with salt and pepper. Drizzle with lemon juice. Toss to coat. Grill in a grill basket coated with cooking spray over medium heat for 6-8 minutes or until shrimp is opaque. Serve with more lemon juice, if desired. 4 servings (If you don’t have a grill basket, put the shrimp in a large piece of foil. Fold the foil up and fold the edges together to form a seam. Repeat with each end to form a packet. Grill as directed.
