Meals don’t have to be super complicated.  Just use the “1-2-3 Eat!” concept.  Protein, Veggie, Starch.  1, 2, 3.  This one is a classic.  A perfectly grilled steak, asparagus roasted in the oven for 10 minutes, and a baked sweet potato.  Easy 1-2-3 Eat Grilled Steak and sides.  Yum!

1-2-3 Eat! Grilled Sirloin Steaks, Roasted Asparagus, Baked Sweet Potatoes

Ingredients

Steak

  • 2 lbs sirloin steak
  • 1 Tbsp kosher salt
  • 1 tsp pepper

Asparagus

  • 2 lbs asparagus trimmed
  • 3 Tbsp extra virgin olive oil
  • 1 Tbs kosher salt

Potatoes

  • 4 sweet potato medium

Instructions

Steak

  • Season steak with salt and pepper. Grill on med. heat until desired doneness. Hint: because this is a leaner cut of beef, it will be tougher when cooked to well or well done. If you want it more tender, keep it med. or med. rare.

Asparagus

  • Trim the ends of the asparagus. Toss with olive oil and arrange in a single layer on a baking sheet. Sprinkle with salt and pepper. Roast in the oven at 400 for about 10 min, or until desired doneness.

Potatoes

  • Pierce potatoes and place in a baking dish to reduce drips in your oven. Bake at 400 for 50-60 minutes, or until soft all the way through. Serve with butter, pure maple syrup, and cinnamon, if desired.

  1. I love your Menu Plan Mondays. I usually find something that we would love
    to eat. Now with my dinner organization system you led me to we are eating
    better- more variety – less pain of what to eat because it is planned ahead.

    1. Hi Nancy! That’s awesome. I’m glad you’ve found something that works well for you! Can you tell me what specifically you are referring to when you say Menu Plan Mondays? Are you referring to our weekly meal plans or our 1-2-3 eat method or something else?
