Meals don’t have to be super complicated. Just use the “1-2-3 Eat!” concept. Protein, Veggie, Starch. 1, 2, 3. This one is a classic. A perfectly grilled steak, asparagus roasted in the oven for 10 minutes, and a baked sweet potato. Easy 1-2-3 Eat Grilled Steak and sides. Yum!
- 2 lbs sirloin steak
- 1 Tbsp kosher salt
- 1 tsp pepper
- 2 lbs asparagus trimmed
- 3 Tbsp extra virgin olive oil
- 1 Tbs kosher salt
- 4 sweet potato medium
- Season steak with salt and pepper. Grill on med. heat until desired doneness. Hint: because this is a leaner cut of beef, it will be tougher when cooked to well or well done. If you want it more tender, keep it med. or med. rare.
- Trim the ends of the asparagus. Toss with olive oil and arrange in a single layer on a baking sheet. Sprinkle with salt and pepper. Roast in the oven at 400 for about 10 min, or until desired doneness.
- Pierce potatoes and place in a baking dish to reduce drips in your oven. Bake at 400 for 50-60 minutes, or until soft all the way through. Serve with butter, pure maple syrup, and cinnamon, if desired.
