Author: Heidi Boortz
Servings : 4

Ingredients

Roasted Applesauce

  • 10 apple any variety
  • 2 tsp extra virgin olive oil
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp dried ginger
  • pinch ground cloves
  • 2 Tbsp honey

Sauteed Zucchini

  • 2 zucchini
  • 2 Tbsp unsalted butter
  • salt

Pork Chops

  • 4 boneless pork chop

Instructions

Pork Chops

  • Sprinkle 4 pork chops with salt and pepper. Grill over med heat 4-5 minutes per side, or until cooked through and no longer pink.

Roasted Applesauce

  • Peel, core, and chop apples into about 1 inch pieces. Toss apples into a bowl and add remaining ingredients. Arrange apples on a baking sheet. Bake at 400 for 30 min or until the largest pieces are soft. Remove from oven. For smooth applesauce, transfer cooked apples to a blender and process until smooth. For chunky applesauce, mash with a fork.

Zucchini

  • Slice zucchini. Melt butter in a medium skillet over med heat. Add zucchini, and stir well. Cook 7 minutes or until tender-crisp. Season with salt and pepper, to taste, if desired.
