Heidi’s Never-Fail Meatloaf is a staple amongst 90/10 Nutrition fans. It seriously never fails to please. In this recipe, it’s paired with a veggie smash and steamed peas.

Ingredients

Heidi’s Never-Fail Meatloaf

  • 1 lb ground beef 90% lean or leaner
  • 1 lb ground turkey 90% lean or leaner
  • 1 cup frozen diced onions optional
  • 1/2 cup 100% whole grain breadcrumbs or flax meal for gluten free
  • 2 egg
  • 1/2 cup milk
  • 1 tsp ground mustard
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp pepper

Veggie Smash-Up

  • 1 head cauliflower small
  • 1/3 lb parsnip approximately 2 large parsnips
  • 2 carrot large
  • 1/4 cup extra virgin olive oil
  • 1/2 cup milk or half and half for creamier mash
  • 1 Tbsp unsalted butter
  • 1/4 cup parmesan cheese grated
  • salt to taste
  • pepper to taste

Peas

  • 1 bag frozen green peas steam-in-the-bag

Instructions

Heidi’s Never-Fail Meatloaf

  • Heat oven to 375. Mix all ingredients in a large bowl or with a stand mixer until well combined. Form into a loaf in a large loaf pan. Bake at 375 for 1 hour or until no longer pink.

Veggie Smash-Up

  • Chop Cauliflower into florets. Peel Parsnips and Carrots and chop them into 1/2′′ pieces. Add cauliflower, parsnips, and carrots into a medium size pot and cover completely with water. Boil until carrots and parsnips are soft (about 10 minutes). Drain cauliflower, parsnip, and carrot mix. Puree in food processor. When the vegetable mix is mostly smooth in the food processor, slowly add oil, milk, salt, and butter and continue to process. Add the grated cheese and mix to melt.

Steam in the Bag Sweet Peas

  • Cook peas according to package directions.
