This BBQ Chicken Pizza Bubble Bread is sort of a mix of a pizza and a casserole, and the result is DELICIOUS!

Ingredients

BBQ Chicken Pizza Bubble Bread

  • 1 batch pizza dough see below
  • 3 boneless, skinless chicken breast boiled and shredded
  • 1 1/2 cup Gracious Pantry BBQ sauce see notes
  • 1 red onion thinly sliced
  • 8 oz monterey jack cheese grated

Pizza Dough

  • 1 1/3 cup water tepid
  • 1/4 cup extra virgin olive oil
  • 3 Tbsp honey
  • 4 cups 100% whole wheat pastry flour or 100% whole wheat flour
  • 1 1/2 tsp salt
  • 2 1/2 tsp active dry yeast

Instructions

Pizza Dough

  • Add liquid ingredients to bowl of a stand mixer. Add dry ingredients, placing salt to the side of the bowl and yeast in the center of the flour. Mix on low speed 5 minutes or until dough ball cleans the sides of the bowl. Alternatively, add ingredients to a mixing bowl and stir until it gets too hard to stir, then knead by hand until dough ball is formed, and dough is soft and springy.

BBQ Chicken Pizza Bubble Bread

  • Preheat oven to 350. Cut pizza dough into 16-24 pieces. Arrange pizza dough on the bottom of a greased 13X9 casserole dish. Mix chicken and bbq sauce. Pour over dough. Top with onions; sprinkle with cheese. Bake, uncovered, at 350 for 30 minutes or until hot and bubbly and cheese is melted.

Notes

NOTE:  Hak's makes a clean bbq sauce, but if you can’t find any clean commercial sauce, feel free to make your own. We like the recipe from The Gracious Pantry here.
