Healthy Mounds Bars

Ingredients

Coconut Filling

  • 4 cups coconut flakes unsweetened
  • 1/3 cup coconut oil melted
  • 3 Tbsp coconut sugar

Chocolate Coating

  • 1/2 cup dark cocoa powder
  • 3 Tbsp honey
  • 1/3 cup coconut oil melted

Instructions

  • Combine coconut flakes, coconut oil, and coconut sugar (yellow tier) in a food processor. Process for 2 minutes.
  • Pour into a parchment lined dish. I used a little glass baking dish about 6 x 8 inches. Any dish will work to try to make it about 1/2-3/4 thick. Put it in the fridge or freezer to harden. You could also put almonds on top and press them in a bit if you want to make Almond Joy.
  • Meanwhile, mix unsweetened dark cocoa, honey (yellow tier), and melted coconut oil.
  • Remove the coconut filling from the fridge/freezer when hard enough to handle as one piece. Cut it into small bars (should make about 16 or so depending on how thick). You could make them different sizes. Mine were about 1 inch wide x 3 inches long.
  • Lay out another sheet of parchment on a baking tray. Dip each bar in the chocolate and set that side down on the parchment. Then pour remaining chocolate over the top of each bar to cover. Put it back in fridge or freezer.
  • They will need to be stored in the fridge or the coating will melt at room temp. I also sprinkled the top of each one with coarse salt.
