10 healthy meals in under 20 minutes

You got home late from work because of an accident on the highway. Your gas light is on. One kid has a science project due tomorrow. The other is eating lipstick as an appetizer. Your spouse is working late. Work was crazy stressful. It’s probably even Monday. You forgot to pull the freezer meal out of the freezer this morning and put it in the slow cooker. You’re busy. Who has time to browse ridiculously elaborate meals that parents who seem to have their stuff together have made, blogged about, and photographed? And everything that comes from the store, in a box, that you throw in the microwave probably has unwanted, red tier ingredients at worst, and too many yellow tier ingredients at best. I have a cookbook by Cooking Light Magazine that’s called “5 Ingredients, 15 Minutes or Less.” Sounds idyllic, doesn’t it?

Except their version of an ingredient is a can of condensed soup or a jar of gravy—great for convenience but when you check the ingredients labels, they’re loaded with dextrose, maltodextrin, sugar, artificial colors, or worse. They might be able to get away with calling that an ingredient for the sake of convenience, and of course it’s quote-unquote light according to their version of light. But it’s just not going to fly with the clean eating standards of 90/10 Nutrition, even if you do only have a few minutes to make dinner.
