This is another classic “1-2-3 Eat!” meal.  Marinated Flank Steak with shoestring sweet potatoes and grilled cauliflower steaks.  It’s so easy!

Marinated Flank Steak

Ingredients

Marinated Flank Steak

  • 1/4 cup extra virgin olive oil
  • 1/4 cup Balsamic Vinegar
  • 2 tsp bottled minced garlic
  • 2 tsp honey
  • 1 tsp salt
  • 1 tsp pepper
  • 2 lbs flank steak

Shoestring Sweet Potatoes

  • 4 sweet potato small
  • 1 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp pepper optional

Cauliflower Steaks

  • 1 head cauliflower sliced on the vertical into 1/2 inch “steaks”
  • 2 tsp extra virgin olive oil
  • 1 Tbsp salt or to taste
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp paprika

Instructions

Marinated Flank Steak

  • Place steak in a glass baking dish. Combine first 6 ingredients in a blender. Blend and pour over steak. Turn steak to coat all sides. Cover tightly with plastic wrap. Place in refrigerator and marinate 30 min to 1 hour. (or as long as overnight)
  • Preheat grill over med heat. Coat grill rack with cooking spray. Grill steak 4-5 min on each side or until it has reached desired doneness. Slice thinly agains the grain and arrange on a platter.

Shoestring Sweet Potatoes

  • Using a spiralizer, process potatoes into long spirals. Toss spiraled potatoes with olive oil. Arrange in a single layer on a baking sheet (hint: line your baking sheet with foil for easier clean up). Sprinkle with salt and pepper. Bake at 400 for 25 min. Turn broiler on and broil 2-5 min or until browned and crispy. See notes about alternatives to a spiralizer.

Cauliflower Steaks

  • 4. Mix dry seasonings in a small bowl. Brush cauliflower with oil, then sprinkle with seasoning. Grill over indirect med heat for 4 min on each side, or until tender-crisp.

Notes

If you don’t have a spiralizer, you might want to get one just so you can make these amazing shoestring sweet potatoes!  Fret not, though.  If you don't have a spiralizer you can shred the potatoes with a cheese grater or a food processor.
