Three Mexican Dishes

Your 90/10 nutrition coaches get together about 3-4 times per year, since we all live in different parts of the country. We call it a business meeting, but mostly we shop, cook, eat, and film ourselves doing all that….for all of YOU (of course). It’s hard work!! We even work on the weekends!!! But our fans are worth the effort!! In reality, it’s always so much fun, that we are always sad when our “meeting” is over.

This time our meeting took place in beautiful Coronado, CA. Did I mention the sacrifices that your 90/10 coaches make for you? It’s a really tough job, but someone has to do it!

Since we were in Coronado, and so close to the Mexican border, we felt it appropriate to do a Mexican themed video series, using three of our favorite healthy Mexican dishes.

After deciding on the menu, our next order of business was to do the shopping. I just have to say, the three of us shopping together is quite comical. We should probably film THAT someday, because the video would most certainly go viral. I’ll just say that we are NOT really organized about our shopping, and ended up sending Ryan to the store several MORE times to get stuff we forgot.

Our first item on the list was Mexican Beef Stew. As the day progressed, I was SUPER concerned that this stew would not be done before 8pm and I would be starving!! Also, I have to mention that all three of us are triathletes, who are currently training for big events. Why is that relevant? Because EVERY morning, BEFORE we could plan, cook and eat….we also had to bike, swim, or run!

Mexican Beef Stew is incredible! It’s one of the MOST family friendly recipes that our meal planner extraordinaire, Heidi Boortz, has created. She actually created it as a freezer meal. The genius behind a freezer meal, is that you throw the entire recipe into a plastic freezer bag and when it’s ready to eat, you simply take the giant frozen conglomeration, toss it in the crock pot for 6-8 hours, and when you return home from your busy day of working, swimming, biking, running or playing mom or dad taxi….you have a healthy meal waiting for your family! Next thing on the menu was the guacamole. For some reason, anytime we have a recipe that requires cilantro, Ryan forgets it!!! True story! So, in the true Spirit of the 90/10 kitchen, Ryan forgot the cilantro. So, I got to walk to the closest store and pick up cilantro for the absent-minded CEO. No problem!! Heidi and I were busy cutting up veggies. Is it just me, or does it make you FEEL healthier simply cutting up veggies? Let me just tell you, you can purchase guacamole at a store, but you will NEVER be satisfied with store bought guacamole after you taste Ryan’s famous guacamole. It is INCREDIBLE! Just don’t forget the cilantro! Another tip here….if possible, purchase the onion already cut up. The guacamole is good, but not worth crying over!

 

 

The final recipe on the menu (which was actually being prepared simultaneously) were the baked chips. Like the guacamole, you will NEVER be happy with store bought tortilla chips again, after tasting these homemade chips! Just the chips and guacamole would make an incredible meal! We actually use this chip recipe in quite a few of our meal plans.

You can use them as a side or you can use them in salads, soups, stews (like the Mexican Beef Stew), or toppings. The awesome thing about these chips is you know exactly what the ingredients are, because YOU control it!

I personally, have never tasted tortilla chips from a bag that I like as much as these homemade chips! Taste is a big deal to me…if something is healthy, but I can’t stand the taste, it’s not worth it to me! This recipe will change your life…seriously!!
