This healthy indian corn casserole uses fresh, whole ingredients to give a healthy twist on this spicy dish. Adjust the cayenne and chili as necessary.

Indian Corn Casserole

Ingredients

  • 3 cups corn
  • 2 zucchini chopped
  • 1 cup frozen diced onions or fresh
  • 1 can green chiles
  • 1/2 cup 100% whole wheat flour
  • 1 tsp cumin
  • 1 tsp Chili Powder
  • 1/2 tsp pepper
  • 1 tsp salt
  • 2 cans black beans
  • 1/4 tsp cayenne pepper

Instructions

  • Combine zucchini, onion, and chiles in a skillet. Cook over med-low heat, covered, about 10 minutes.
  • Add flour, cumin, chili powder, pepper, salt, cayenne, corn, and beans. Stir well. Continue cooking 4 more minutes.

  • Add mixture to baking dish.

  • Bake at 325 for 25 min.
