Grilled Pork Tenderloin paired with roasted grape tomatoes and quinoa.  This is a classic 1-2-3 eat dish.

    Pork Tenderloin
    1. Preheat grill to medium. Sprinkle pork with salt and pepper. Grill over med heat for 20 min, or until juices no longer run pink. Remove from grill and let rest 5 minutes before slicing.
    Oven-Roasted Tomatoes
    1. Preheat oven to 450. Toss tomatoes in olive oil until well coated. Arrange in a single layer on a baking sheet. Sprinkle with salt, pepper, and oregano. Bake at 450 for 15 minutes
    Quinoa
    1. Add quinoa and broth to a saucepan and bring to a boil. Reduce heat cover and simmer until all liquid is absorbed (about 15 min). Fluff with a fork and serve.
