This simple coconut rice is made with whole grain brown rice and coconut milk. Try this with chile lime salmon and veggies!
- 2 cups brown rice uncooked
- 1 1/2 cups coconut milk unsweetened full fat
- 1 cup water
- 1/2 tsp salt
- Combine rice, milk, and water in saucepan. Bring to a boil (mixture will thicken). Cover, reduce heat, and simmer 20 minutes or until rice is cooked. Stir in salt.
