Any miso paste would work in this recipe, but we used mellow white for testing purposes. Try this Healthy Miso Soup with our Sweet Potato Spring Rolls.
- 4 1/2 cups water
- 1/4 cup miso paste
- 2 Tbsp wakame seaweed
- 1 cup tofu extra firm, squeezed dry and diced
- 4 green onion thinly sliced
- Bring 4 cups of water to a boil. While water is heating, warm 1/2 cup water in microwave 1 minute. Stir miso paste into 1/2 cup warm water until smooth.
- When water is boiling, remove from heat. Immediately stir in miso mixture, wakame, and tofu. Let stand 5 minutes. Top with green onions.
