If you use frozen brown rice for this black bean bowl recipe, it just doesn’t get much more simple than this.
- 1 cup brown rice
- 1/2 cup black beans
- 1/4 cup cheddar cheese shredded (or mexican blend)
- 1/2 avocado
- 1/4 cup frozen corn
- 2 tbsp salsa
- Cook rice per package directions or in rice cooker.
- Microwave canned black beans and corn until warm or on stove top.
- Assemble bowl starting with rice and beans and then adding toppings.
