There’s never a bad time to put these two healthy, delicious vegetables together. Roasting vegetables is my favorite way to cook them, and this colorful pairing of roasted asparagus and tomatoes will decorate your plate and delight your taste buds. This would go great with a nice protein like a steak or even another vegetarian option.
- 1 lb asparagus trimmed
- 1 pint yellow cherry tomatoes
- 3 Tbsp extra virgin olive oil
- 1 Tsp kosher salt
- Preheat oven to 400. Combine asparagus, tomatoes, and olive oil in a large bowl. Toss well to coat. Arrange vegetables on a parchment-lined baking sheet. Sprinkle with salt. Bake at 400 for 20 minutes.
