Colored food is only good for you when it’s colored by nature, and not by factory. Try these tasty Purple Sweet Potato Fries for a colorful side dish.
- 6 purple sweet potato
- 1/3 cup extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp pepper optional
- Preheat oven to 425.
- Peel potatoes and slice into french fry shapes. (Wedges are okay too!) Place in a bowl. Pour olive oil on fries, and toss to coat. Arrange in a single layer on a baking sheet (lined with parchment for easier clean up, if desired). Sprinkle with salt and pepper (if desired). Bake at 425 for 40-50 minutes or until thickest pieces are cooked through.
- For crispier fries, turn broiler on after baking, and broil 2-3 minutes, watching carefully to prevent burning.
