With no meat to brown, these “PDQ peppers” get stuffed Pretty Darn Quick!  Perfect for a weeknight!  We made these into jack-o-lantern peppers for Halloween night, but they’d be good on any night!

Ingredients

  • 4 bell pepper any color
  • 1 1/2 cup brown rice cooked
  • 1 can jackfruit
  • 1 can tomato sauce 8 oz
  • 1 Tbsp bottled minced garlic
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 1/2 cups mozzarella grated

Instructions

  • Preheat oven to 350
  • Slice the tops off all 4 peppers and set aside. Scoop out seeds and membranes and discard. Place in a round glass baking dish.
  • In a medium bowl, mix cooked rice, tomato sauce, and next 3 ingredients. Stuff mixture into peppers. Top with cheese. Top with pepper tops.
  • Bake at 350 for 15-20 minutes or until cheese is melted.

Notes

NOTE:  Leave cheese off to make these vegan
