Healthy Thai Chicken Soup…So quick. So easy. So healthy. So delicious! Add this to your week night repertoire! (And check out our vegan version of this soup here!)
- 2 cans coconut milk full fat, not lite
- 1/2 cup Chicken broth
- 1 Tbsp red curry paste
- 1 tsp salt
- 1/2 tsp pepper
- 2 boneless, skinless chicken breast very thinly sliced
- 1 package snow peas
- 2 cups bean sprouts
- 1/4 cup cilantro chopped
- Add coconut milk, chicken broth, curry paste, salt, and pepper to a saucepan. Bring to a boil. Add chicken breasts. Boil 3 minutes. Add peas and sprouts. Boil 5 minutes longer or until chicken is cooked through. Top with cilantro.

I love soup; this one looks good!
This soup was so simple to make and the taste was delish. I added a bit more of the curry paste as we like things a bit spicier than most.
Will definitely make this again.
