Thai Chicken Soup

Ingredients

  • 2 cans coconut milk full fat, not lite
  • 1/2 cup Chicken broth
  • 1 Tbsp red curry paste
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 boneless, skinless chicken breast very thinly sliced
  • 1 package snow peas
  • 2 cups bean sprouts
  • 1/4 cup cilantro chopped

Instructions

  • Add coconut milk, chicken broth, curry paste, salt, and pepper to a saucepan. Bring to a boil. Add chicken breasts. Boil 3 minutes. Add peas and sprouts. Boil 5 minutes longer or until chicken is cooked through. Top with cilantro.
