Beef tacos are a staple in our house. My husband goes into withdrawals if I don’t make them regularly, but these simple beef tacos make it easy and healthy.

Ingredients

  • 1 lb ground beef 90% lean or leaner
  • 2 Tbsp Chili Powder
  • 2 Tbsp cumin
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 3/4 tsp salt
  • 1/4 tsp oregano
  • 1/4 tsp paprika
  • 1/4 tsp pepper
  • 12 corn tortilla
  • 2 cups cheddar cheese grated
  • 1 head romaine lettuce shredded
  • 2 tomato medium, diced
  • salsa optional
  • avocado diced, optional
  • cilantro chopped, optional
  • sour cream optional

Instructions

  • Preheat oven to 375. Heat beef in a large skillet, stirring to crumble. When beef is cooked, add next 8 ingredients. Add 1 c. water. Simmer 20 minutes. Assemble your tacos as you wish. I prefer tortilla + beef + cheese + lettuce + tomatoes + avocados.
