AAH, Fall. The leaves are turning luscious shades, the air is turning cooler (in theory), and Pumpkin Spice has run itself rampant, it seems, everywhere (which is good news if you’re a pumpkin spice person and bad if you’re not. It does seem fairly polarized: you’re either one or the other.)

This might be a good time to say that if you’re the former, you’ll be disappointed with this blog. You will find nary a pumpkin spice recipe here among our Autumn oven recipes. There are tons of good great autumnal recipes here, using the largest cooking appliance in the kitchen, but I’m intentionally not including any pumpkin spice.

I’m also not focusing on microwave, stove top, or even my beloved grill this time. Instant Pots and Slow Cookers are great, especially in Fall, but they have their own spotlights. Click here for healthy Instant Pot recipes and here for healthy slow cooker recipes. Today, this time, the underrated and seldom celebrated oven gets the glory in this Autumn oven recipes blog.

You probably haven’t given much thought to your oven recently, if ever. It’s there. It probably came with your house/apartment. It’s great for cookies and frozen pizza and the occasional birthday cake. But other than that, it’s sort of just another thing to clean, isn’t it?

Well not anymore! There are so many fall-friendly recipes that let your oven shine (even if it’s not that clean—hey. I won’t tell anyone if you won’t.)

🍂 SHEET PAN RECIPES

First, there is a method of cooking that uses a sheet pan. Throw everything on one big flat pan, stick it in the oven, and let ‘er rip. Check out these healthy sheet pan recipes here or use the button below!

🍂 ROASTED VEGETABLES

Next, and this probably should have been first because it’s my favorite, is roasting. I love roasted vegetables. I consider it my duty in life to introduce roasted vegetables to every single person I meet.

Them: “I don’t like Brussels Sprouts.”
Me: “Have you tried them roasted?”
Them: blank stare
Me: “Oh you really simply MUST.”

Take just about any vegetable, toss it in olive or avocado oil, spread it on a sheet pan, sprinkle with salt and pepper (kosher salt is my personal choice), and roast at 400 degrees for 20-30 minutes. Bada Boom. Like healthy candy. Perfect as a side dish for any 1-2-3 Eat! meal! My favorite vegetables to roast are, in no particular order:

🥕 Brussels sprouts
🥕 cabbage
🥕 butternut squash
🥕 acorn squash
🥕 beets
🥕 carrots
🥕 purple potatoes
🥕 sweet potatoes
🥕 green beans (Don’t tell Ryan.)
🥕 broccoli
🥕 cauliflower
🥕 tomatoes
🥕 asparagus
🥕 radishes (OMG! Roasted Radishes!)

Just to name a few.

🍂 ROASTED APPLESAUCE

And then there’s Roasted Applesauce. This recipe is so divine it gets a bullet all by itself. It doesn’t even have to share. (But if you make it YOU will have to share.) Apples are prolific in Fall, which makes them delicious, loaded with nutrients, healthy, and inexpensive. I could eat Roasted Applesauce every single day and be perfectly content forever. And so could my kids.

Well that’s enough for an Autumn Oven, isn’t it? Sheet Pan Meals, Roasted Veggies, and Roasted Applesauce. We probably don’t need to go any further. We definitely don’t need to talk about healthy fall desserts from your oven, do we? OK fine. Let’s do it.

🍂 HEALTHY FALL DESSERTS

Zucchini, like apples, is seasonal and a late summer/early fall veggie. Pretty easy to get great ones on the cheap. So what better way to use up that zucchini than in a cookie?
