Taco Rice Casserole has all of the wonders of a taco but eats like a casserole. Add some amazing guacamole, maybe some sour cream, and a few homemade tortilla chips and you have quite the feast.

Ingredients
- 1 cup brown rice uncooked
 - 1 lb ground beef 90% lean or leaner
 - 1 bag frozen green bell peppers 10 oz
 - 1 cup frozen diced onions
 - 1 cup frozen corn
 - 2 Tbsp Chili Powder
 - 2 Tbsp cumin
 - 2 tsp garlic powder
 - 2 tsp onion powder
 - 1/2 tsp oregano
 - 1/2 tsp paprika
 - 2 tsp salt
 - 1/2 tsp pepper
 - 1 can Diced Tomatoes 14.5 oz
 - 1 can black beans 14.5 oz, rinsed and drained
 - 2 cups cheddar cheese grated, as topping, optional
 
Instructions
- Preheat oven to 350.
 - Cook rice according to package directions.
 - While rice is cooking, brown beef. Once beef is no longer pink, add peppers, onion, corn, spices, tomatoes, and black beans. Stir well to combine.
 - Add rice to a greased 13X9 baking dish. Top with meat mixture. Top with cheese. Bake 15 minutes or until cheese is melted.
