We’re putting bacon and green onions in our macaroni, and topping it with a crispy parmesan topping. Mmmmmmm.  Clean Eating Skillet Mac-N-Cheese.

Skillet Mac-N-Cheese, 7 Minute Green Beans

Ingredients

Skillet Mac-N-Cheese

  • 1 cup parmesan cheese fresh grated
  • 8 oz 100% whole wheat pasta such as elbows or rotini
  • 4 tsp 100% whole wheat pastry flour
  • 1 tsp ground mustard
  • 1 tsp garlic powder
  • 1 1/2 cups milk divided
  • 2 cups sharp cheddar cheese grated
  • 1/4 cup green onion sliced
  • 4 slices uncured bacon cooked and crumbled

  • 1 lb green beans trimmed

Instructions

Skillet Mac-N-Cheese

  • Heat small skillet over medium heat. Add 1/2 c. parmesan cheese to hot skillet. Cook 2-3 minutes or until bubbly and golden. Carefully remove to a piece of parchment paper. Repeat with remaining cheese. Set parmesan crisps aside to cool completely. Preheat broiler. Cook pasta according to package directions. Heat flour, garlic, mustard, and 1/2 c. milk to a medium saucepan. Slowly add remaining milk, whisking constantly. Bring to a boil. Cook 1 minute, whisking constantly. Remove from heat and allow to stand 5 minutes. Stir in cheese. Stir together drained pasta and cheese mixture. Stir in green onions and crumbled bacon. Add to large oven-proof skillet. Crumble parmesan crisps and sprinkle over the top of the pasta mixture. Broil 7 minutes.

7 Minute Green Beans

  • Bring 2 quarts of water to a rolling boil. Add green beans. Cook for exactly 7 minutes. Drain. Serve.
