Roasted Balsamic Chicken is a simple dish that is easily paired with a veggie and a starch for a healthy “1-2-3 Eat!” meal. We originally paired this with butternut squash and Brown Rice.
- 1/4 cup extra virgin olive oil
- 2 Tbsp Balsamic Vinegar
- 1 tsp salt
- 1/2 tsp pepper
- 4 boneless, skinless chicken breast
- Combine chicken and remaining ingredients in a large zip top plastic bag. Refrigerate overnight.
- Preheat oven to 350. Place marinated chicken breasts in a glass baking dish. Bake 30-40 minutes or until chicken is cooked through.
