Normally I prefer steak on the grill, but there is something to be said for the way a steak cooks in a cast iron pan. If you think steak only goes on the grill, make an exception for this Lemon-Dijon Pan Steak

Lemon-Dijon Pan Steak

Ingredients

  • 1 lb sirloin steak top sirloin, about 3/4 in thick
  • 1/4 tsp pepper coarse ground
  • 1 cup vegetable broth
  • 1 Tbsp 100% whole wheat flour
  • 2 tsp Dijon mustard
  • 2 tsp worcestershire sauce clean version such as Wizard's brand
  • 2 tsp lemon juice
  • 1/2 tsp lemon peel grated
  • 2 green onion thinly sliced

Instructions

  • Cut beef into 4 servings. Sprinkle with pepper. Heat heavy skillet over medium heat. Add steaks. Cook 4-6 minutes per side, or until steak is just a little less than the desired doneness. (It will continue to cook after it is removed from heat.) Remove from skillet
  • Mix broth, flour, mustard, Worcestershire sauce, lemon juice, and lemon peel. Add to skillet. Bring to a boil, mixing constantly. Boil 1 minute, mixing constantly. Pour over steak. Sprinkle with green onions.
