Beef Stroganoff, 7 Minute Green Beans

Ingredients

Beef Stroganoff

  • 1/4 cup unsalted butter
  • 8 oz mushrooms sliced
  • 1 Tbsp bottled minced garlic
  • 1 1/2 lb sirloin steak thinly sliced against the grain
  • 1 1/2 cups vegetable broth or mushroom broth, divided
  • 1/2 tsp salt
  • 1/4 cup 100% whole wheat flour
  • 3/4 cup plain yogurt
  • 3/4 cup sour cream
  • 3 cups 100% whole grain egg noodles cooked and drained
  • 4 green onion thinly sliced

  • 1 lb green beans trimmed

Instructions

Beef Stroganoff

  • Heat butter, mushrooms, and garlic in a medium skillet, 7-8 minutes or until mushrooms are tender, stirring occasionally. Remove from skillet and set aside.
  • In same skillet, cook beef 5-7 minutes, stirring frequently, until brown. Stir in 1 c. broth and salt. Bring to a boil, cover, reduce heat, and let simmer 15 minutes.
  • Stir remaining 1⁄2 c. broth into flour. Stir well, then stir into beef mixture. Add mushroom mixture, bring to a boil, and boil 1 minute, stirring constantly.
  • Stir in yogurt and sour cream. Heat just until hot. Pour over cooked noodles. Sprinkle with green onions.

7 minute Green Beans

  • Bring 6 c. water to a boil in a medium saucepan. Add green beans. Boil exactly 7 minutes. Drain and serve. 4 servings
