These grilled marinated vegetables go so well with a simple grilled chicken breast. It’s so simple but so tasty…the best kind of meal.

Grilled Chicken Breasts, Grilled Marinated Vegetables, Steamed Peas

Ingredients

Grilled Chicken Breasts

  • 4 boneless, skinless chicken breast
  • 1 tsp salt
  • 1 tsp pepper

Grilled Marinated Vegetables

  • 1 red onion cut into large chunks
  • 2 zucchini cut into bite sized chunks
  • 2 yellow squash cut into bite sized chunks
  • 1 pint baby bella mushrooms whole
  • 1 red bell pepper cut into large chunks
  • 1 orange bell pepper cut into large chunks

Marinade

  • 1/4 cup extra virgin olive oil
  • 1/4 cup Balsamic Vinegar
  • 1 Tbsp bottled minced garlic
  • 2 Tbsp honey
  • 1 tsp pepper
  • 1 tsp salt

Steamed Peas

  • 1 bag frozen green peas steam-in-the-bag

Instructions

Grilled Chicken Breasts

  • Preheat grill to medium. Spray rack with cooking spray. Sprinkle chicken with salt and pepper. Grill on medium-low 4 minutes per side or until chicken is done and juices run clear.

Grilled Marinated Vegetables

  • Combine all vegetables and all marinade ingredients in a large zip top bag. Toss well to coat. Let marinate 1 hour. Preheat grill to medium. Add vegetables and marinade to a grill basket. Grill 20-30 minutes, stirring occasionally, or until vegetables are tender-crisp. 6 servings

Steamed Peas

  • Prepare peas as directed on package.
