This simple and delicious ECTA Sandwich will become a “go to” meal around your house. Just cook up an egg, toast some bread, and combine with tomato, cheese and avocado.

Ingredients

  • 2 slices 100% Whole Grain Bread with no HFCS
  • 1 egg
  • 1 oz cheddar cheese shredded
  • tomato sliced
  • 1/2 avocado sliced
  • hot sauce such as Cholula, optional

Instructions

  • Simply toast some whole wheat bread, cook the egg to your liking (could be over easy, sunny side up, scrambled, over hard, etc), and make a sandwich with cheese (go light), tomato slices, and avocado (sliced or mashed). I will be seasoning with a little cholula hot sauce because it is a must.
