Creamy Garlic Salmon is so simple and it even saves you time for other meals because the creamy garlic dressing can be used for salads as well.

Creamy Garlic Salmon, Edamame, Wild Rice

Ingredients

Creamy Garlic Salmon

  • 4 salmon fillet 4-6 oz. each

Creamy Garlic Salad Dressing

  • 1/4 cup extra virgin olive oil Plus 1 Tbsp if air frying
  • 1/2 cup apple cider vinegar
  • 1 Tbsp bottled minced garlic
  • 3 Tbsp lemon juice
  • 2 Tbsp fresh basil
  • 1 tsp salt plus more, to taste, if air frying
  • 1 Tbsp honey

Edamame

  • 1 bag shelled edamame steam-in-the-bag

Wild Rice

  • 3 cups vegetable broth with no sugar listed in ingredients
  • 1 1/2 cup wild rice uncooked

Instructions

Creamy Garlic Salad Dressing

  • Combine all ingredients in a blender. Blend until smooth.

Creamy Garlic Salmon

  • Preheat oven to 400. Arrange salmon in a greased baking dish. Bake at 400 8-10 minutes or until fish flakes easily with fork. Pour dressing over fish.

Edamame

  • Cook edamame as directed on package.

Wild Rice

  • Combine rice and broth in a saucepan. Bring to a boil. Reduce heat, cover, and simmer 20 minutes or until all liquid is absorbed. 4-6 servings

Air Fryer

  • Place salmon in basket of air fryer. Drizzle with 1 tablespoon olive oil. Sprinkle with salt. Air fry at 390 degrees for 7 minutes.
  • While salmon is cooking, make dressing. Warm dressing in microwave 1 minute or in a small saucepan on the stove over low heat. Do not boil.
  • Drizzle dressing over cooked salmon. Garnish with additional basil, if desired.
