When Pizza Hut introduced the stuffed crust pizza in 1995, their sales increased by 37%.  It seems people like the idea of having a cheesy bread to dip after their slice of pizza was gone.  (I hear tell that some even START with the crust, it’s that good!)

Well, no matter.  With this clean eating Stuffed Crust Pizza, you no longer have to toss the uneaten crusts in the garbage or feed them to the dogs.  They will no longer be uneaten after you fill it with melty, oozy, cheese.  (And I promise, it’s easier than it sounds!)

Stuffed Crust Pizza

Ingredients

Crust

  • 1 3/8 cup water lukewarm
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp honey
  • 4 cups 100% whole wheat pastry flour or regular whole wheat flour
  • 1 1/2 tsp salt
  • 2 1/2 tsp active dry yeast
  • 10 oz string cheese unwrapped

Sauce

  • 1 tsp extra virgin olive oil
  • 1 tsp bottled minced garlic
  • 8 oz tomato sauce

Toppings

  • 4 cups mozzarella grated
  • 4 each button mushrooms sliced
  • 4 leaves fresh basil
  • 1 each bell pepper sliced
  • 8 oz Black olives sliced

Instructions

Stand Mixer Method

  • Add liquids, then dry ingredients to the bowl of a stand mixer. (Take care not to let yeast and salt touch.)
  • Fit mixer with dough hook. Mix on low speed until dough ball forms and cleans the sides of the bowl. (2-5 minutes)
  • (If dough ball is too sticky, add more flour, 1 T at a time. If it is too dry, add more water, 1 T. at a time.)
  • Divide dough in half.
  • Roll each half of dough out into desired shape. (Rounds or rectangles work best for this recipe.)
  • Line string cheese up around the edges of the prepared dough. Carefully roll up the dough around the crust and pinch seams to seal. Top pizza as desired. Bake in a 400 degree oven for 10-12 minutes.

Mix by Hand Method

  • Mix all ingredients in a large bowl with a wooden spoon. As soon as the dough is too tough to stir with a spoon, transfer to a lightly floured surface and knead by hand 10 minutes, or until dough is pliable and doesn't stick to hands.
  • (If dough ball is too sticky, add more flour, 1 T at a time. If it is too dry, add more water, 1 T. at a time.)
  • Divide dough in half.
  • Roll dough out into desired shape. (Rounds or rectangles work best for this recipe.)
  • Line string cheese up around the edges of the prepared dough. Carefully roll up the dough around the crust and pinch seams to seal. Top pizza as desired. Bake in a 400 degree oven for 10-12 minutes.
