Taco Rice Casserole has all of the wonders of a taco but eats like a casserole.  Add some amazing guacamole, maybe some sour cream, and a few homemade tortilla chips and you have quite the feast.

Ingredients

  • 1 cup brown rice uncooked
  • 1 lb ground beef 90% lean or leaner
  • 1 bag frozen green bell peppers 10 oz
  • 1 cup frozen diced onions
  • 1 cup frozen corn
  • 2 Tbsp Chili Powder
  • 2 Tbsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 can Diced Tomatoes 14.5 oz
  • 1 can black beans 14.5 oz, rinsed and drained
  • 2 cups cheddar cheese grated, as topping, optional

Instructions

  • Preheat oven to 350.
  • Cook rice according to package directions.
  • While rice is cooking, brown beef. Once beef is no longer pink, add peppers, onion, corn, spices, tomatoes, and black beans. Stir well to combine.
  • Add rice to a greased 13X9 baking dish. Top with meat mixture. Top with cheese. Bake 15 minutes or until cheese is melted.
