Slow Cooker Chicken Cacciatore

This version of Slow Cooker Chicken Cacciatore is about as simple as it gets. You can certainly get fancier with chicken cacciatore (and we did here), but this one does the trick and takes less than 5 minutes to prep.

Slow Cooker Chicken Cacciatore

Ingredients

  • 4 boneless, skinless chicken breast
  • 1 jar spaghetti sauce no sugar added
  • 2 zucchini sliced
  • 2 yellow squash sliced
  • 1 lb 100% whole wheat pasta if desired

Instructions

To Cook Immediately: Slow Cooker

  • Combine all ingredients except pasta in a slow cooker.
  • Cook on low 6 hours or on high 4 hours.
  • While cacciatore is cooking, cook noodles as directed on package. Serve cacciatore over cooked and drained noodles.

To cook Immediately: Instant Pot

  • Combine all ingredients except pasta in an instant pot. Lock lid; set valve to sealing. Program for manual-high and 24 minutes. Either allow for natural pressure release, or carefully move valve to venting to quick release the pressure.
  • While cacciatore is cooking, cook noodles as directed on package. Drain.
  • Serve cacciatore over cooked and drained noodles.

To Freeze

  • Add all ingredients except pasta to a freezer bag. Freeze.

To Cook After Freezing: Slow Cooker

  • Add contents of freezer bag to slow cooker. Cook on low 8 hours or on high 6 hours. While cacciatore is cooking, cook pasta according to package directions. Drain. Serve cacciatore over cooked and drained pasta.

To Cook After Freezing: Instant Pot

  • Add contents of freezer bag to Instant Pot. Press sauté. Let cook until at least 1/2 cup liquid melts and accumulates at the bottom of the insert. Press cancel. Lock lid; set valve to sealing. Program for manual-high and 26 minutes. Allow for natural pressure release or carefully move valve to venting to release the pressure.
  • While cacciatore is cooking, cook pasta according to package directions. Drain.
  • Serve cacciatore over cooked and drained pasta.
