A simple Grilled Pork Tenderloin recipe paired with a veggie and a healthy starch makes for a gourmet dinner without much work.

Ingredients

Grilled Pork Tenderloin

  • 1 1/2 lb pork tenderloin any tenderloin from 1-2 lbs will work
  • 2 tsp salt
  • 1 tsp pepper

Roasted Asparagus

  • 1 lb asparagus rough ends trimmed
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp salt

Baked Sweet Potatoes

  • 4 sweet potato medium

Instructions

Grilled Pork Tenderloin

  • Preheat grill on medium heat. Sprinkle pork tenderloin with salt and pepper. Grill over medium heat 20 minutes or until pork is no longer pink and juices run clear.

Roasted Asparagus

  • Cut asparagus into 2 inch pieces. Toss in a bowl with olive oil. Arrange in a single layer on a baking sheet. Sprinkle with salt. Bake at 400 for 20 minutes or until beginning to brown.

Baked Sweet Potatoes

  • Preheat oven to 400. Pierce potatoes with fork. Place potatoes in a baking dish. Bake at 400 for 40-60 minutes or until cooked through.
