WAG Sandwiches are a vegan walnut, apple, and garbanzo bean salad that makes a unique and tasty sandwich for a fun lunch.

WAG Sandwiches (Walnut, Apple, Garbanzo)

Ingredients

Garbanzo Bean Salad

  • 1 can garbanzo beans rinsed and drained
  • 2 Tbsp red onion finely chopped
  • 1 stalk celery finely chopped
  • 2 apple cored and finely chopped
  • 4 Tbsp walnuts finely chopped

Tahini Glaze Dressing

  • 1 Tbsp tahini
  • 3 Tbsp milk or non dairy milk
  • 2 1/2 tsp lemon juice
  • 1 tsp pure maple syrup
  • 1 tsp red wine vinegar
  • 1/4 tsp salt

Sandwiches

  • 1 avocado thinly sliced
  • 1 tomato sliced into 4 slices
  • 8 slices 100% Whole Grain Bread no high fructose corn syrup
  • salt to taste
  • pepper to taste

Instructions

Garbanzo Bean Salad

  • Mash garbanzo beans. Combine mashed beans with chopped onion, chopped celery, chopped apple, and chopped walnuts. Set aside.

Tahini Glaze Dressing

  • Combine all dressing ingredients in a blender. Blend until smooth. Fold dressing into garbanzo bean salad until well combined.

Sandwiches

  • Toast bread. Arrange garbanzo bean salad on bread, and top with sliced avocado, sliced tomatoes, and salt and pepper.

Notes

For gluten free, use 100% whole grain gluten free bread with no high fructose corn syrup.

  1. They tasted great! The only thing I would do different is use a pita pocket or eat it out of a Bowl. Will definitely be making this again! I made the full recipe and portioned it out. I had lunch for a full week
