Low Carb Mocha Pudding Pops

To be completely honest, this recipe was supposed to be a smoothie, with the possible variation of a smoothie pop added on later. However, during testing, it came out way too thick to suck through a straw, and I decided its consistency was closer to pudding than to smoothie, so I froze it in popsicle molds and these Low Carb Mocha Pudding Pops were born.

And I’m not even mad!

Low Carb Mocha Pudding Pops

Ingredients

  • 1 can coconut milk full fat
  • 2 tsp vanilla extract
  • 2 Tbsp natural peanut butter
  • 4 Tbsp cocoa powder we used dark cocoa
  • 1 Tbsp espresso powder
  • 5 drops stevia pure
  • 1/2 each avocado

Instructions

  • Combine all ingredients in a blender. Blend until smooth. Pour into popsicle molds, leaving slight headroom for expansion. Freeze until firm. Enjoy anytime.

Notes

We used King Arthur Flour brand Espresso Powder for testing purposes.
We had some vintage Tupperware brand popsicle molds that we used for testing, but any popsicle molds will work.  Keep in mind that larger molds will yield fewer pops and smaller molds will yield more pops.

Simple ingredients make up these delightful healthy frozen treats! Coconut milk, dark cocoa powder, espresso powder, avocado even!, peanut butter, vanilla, and sweetened only with stevia.

Although were not strictly keto (at all) here, these keto mocha pudding pops are great for those that are as well!
