This healthy vegan coconut whipped cream can be used anywhere you would use whipped cream. So chuck the Redi-Whip and give your stand mixer some love. We love it on fresh berries for a quick and easy snack or dessert. (Did someone say dessert? Can you actually have dessert on this plan? YES YOU CAN!)
Or on pancakes! Can you imagine this on top of our Whole Wheat Pancakes? I certainly can, and am making a mental note to try it soon.

Make a healthy banana split with bananas, Vanilla Bean Frozen Yogurt, fresh berries, canned pineapple, and this whipped coconut cream!
- 1 can coconut cream not milk
- 2 Tbsp pure maple syrup
- 1 tsp vanilla extract
- Pour coconut cream into bowl of stand mixer and mix until well incorporated. Chill cream, bowl, and whisk attachment in fridge 1 hour.
- Fit bowl and whisk attachment to mixer. Whip on high speed 2 minutes. Add vanilla and syrup. Continue to whip 5 more minutes or until thickened and fluffy. Chill until ready to use.
