All you need for a superb weeknight meal with these Southwestern Pork Chops is a simple rub and a hot grill

Southwestern Pork Chops

Ingredients

Southwest Pork Chops

  • 1 Tbsp ancho chili powder
  • 1 tsp extra virgin olive oil
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1 Tbsp bottled minced garlic
  • 1/2 tsp salt
  • 4 boneless pork chop center cut
  • 1/4 bunch cilantro finely chopped
  • lime wedged, optional garnish

Tex Mex Salad

  • 1 head romaine lettuce
  • 1 bag frozen corn 10 oz
  • 1/2 cup salsa no sugar listed in ingredients
  • 1 can black beans 14.5 oz, rinsed and drained

Instructions

Southwest Pork Chops

  • Combine first 6 ingredients in a small bowl. Rub evenly over both sides of pork. Place in large zip top plastic bag. Seal and refrigerate 30 minutes.
  • Preheat grill to medium heat. Grill pork chops 6-8 minutes per side or until no longer pink and juices run clear. Sprinkle with lime juice and garnish with lime wedges, if desired.

Tex Mex Salad

  • Divide lettuce evenly among 4 salad plates. Combine corn, salsa, and black beans. Top lettuce with corn mixture.
