Southwestern Pork Chops

    Southwest Pork Chops
    1. Combine first 6 ingredients in a small bowl. Rub evenly over both sides of pork. Place in large zip top plastic bag. Seal and refrigerate 30 minutes.
    2. Preheat grill to medium heat. Grill pork chops 6-8 minutes per side or until no longer pink and juices run clear. Sprinkle with lime juice and garnish with lime wedges, if desired.
    Tex Mex Salad
    1. Divide lettuce evenly among 4 salad plates. Combine corn, salsa, and black beans. Top lettuce with corn mixture.
