- Simple Grilled Salmon
- 4 salmon fillets 4-6 oz each
- salt to taste
- pepper to taste
- 1 lemon
- Roasted Beets
- 3 beets medium, peeled and cut into cubes
- 2 Tbsp extra virgin olive oil
- 2 tsp kosher salt
- Brown and Wild Rice
- 1/2 cup wild rice
- 1/2 cup brown rice
- 2 cups vegetable broth with no sugar listed in ingredients

- Preheat grill. Spray grates with cooking spray. Sprinkle salmon with salt and pepper, both sides. Grill over med-low heat 4 min per side or until fish is opaque and flakes easily. Squirt with fresh lemon juice.
- Preheat oven to 400. Toss beet cubes in oil in a medium bowl, until well coated. Arrange in single layer on baking sheet. Sprinkle with salt. Bake at 400 for 20-30 min or until soft and beginning to brown on the edges.
- Combine all ingredients in a medium saucepan. Bring to a boil. Reduce heat, cover, and simmer 20 min or until all liquid is absorbed. Serve with Braggs Liquid Aminos, if desired.
