1-2-3 Eat! Simple Grilled Salmon, Roasted Beets, Brown and Wild Rice

This “1-2-3 Eat!” meal is as easy as it gets.  Simple Grilled Salmon (protein), paired with Roasted Beets (veggie), and brown and wild rice (starch).

Simple Grilled Salmon
  1. Preheat grill. Spray grates with cooking spray. Sprinkle salmon with salt and pepper, both sides. Grill over med-low heat 4 min per side or until fish is opaque and flakes easily. Squirt with fresh lemon juice.
Roasted Beets
  1. Preheat oven to 400. Toss beet cubes in oil in a medium bowl, until well coated. Arrange in single layer on baking sheet. Sprinkle with salt. Bake at 400 for 20-30 min or until soft and beginning to brown on the edges.
Brown and Wild Rice
  1. Combine all ingredients in a medium saucepan. Bring to a boil. Reduce heat, cover, and simmer 20 min or until all liquid is absorbed. Serve with Braggs Liquid Aminos, if desired.
