As one of my friends said when I posted a sneak-peek picture of this recipe on Facebook, “You had me at Cinnamon Roll.” Â Truer words have never been spoken, because this Cinnamon Roll Breakfast Parfait will own you at first bite. Â My suggestion, and this is coming from a place of experience, is to make several at once because you will want to eat this every morning for breakfast; it’s that good. Â (Hint: it makes a great dessert too, for when you just need something sweet at the end of the day.)


Ingredients
- 1 cup plain yogurt
- 4 oz cream cheese
- 2 Tbsp unsalted butter
- 1/2 cup pecans
- 1 Tbsp coconut sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions
- Combine yogurt and cream cheese (I used a blender). Set aside.
- Melt butter and sugar in a small skillet over medium low heat (sugar will burn if it's too hot). Add pecans and cinnamon. Cook 2-3 minutes or until pecans are toasted.
- Add 1/4 cup yogurt mixture to a parfait glass. (A wine glass or champagne flute works great, as does any tall glass.) Top with 2 tablespoons pecan mixture. Repeat layers, using half of each mixture. Repeat with second parfait glass.
