This healthy Asian Protein Salad gets plant-based protein from chickpeas, nuts, and seeds.  Add your favorite dressing for a great lunch or even a side salad.

Asian Protein Salad

Ingredients

  • 1/2 cup quinoa
  • 5 oz mixed baby greens
  • 6 Tbsp sunflower seeds
  • 6 Tbsp cashews
  • 1 can chickpeas
  • 1 cup carrot grated
  • 1 each cucumber chopped
  • 9 each grape tomatoes

Instructions

Quinoa

  • Prepare quinoa as directed on package. Or, place quinoa and 3/4 cup water in an instant pot. Lock lid; set valve to sealing. Program for manual-high and 1 minute. Allow for natural pressure release for 10 minutes. Carefully move valve to venting. Fluff quinoa with fork.

Salad

  • Divide greens evenly among each of 3 bowls. Top greens evenly with quinoa. Top greens evenly with all remaining ingredients. Serve with dressing of choice. (We suggest Maple-Soy Dressing. Link in notes.)

  1. This was one of the first recipes on this site I made because it was on the weekly meal plan. I was iffy but it was fantastic. I loved it. Definitely saving as a favourite. (I made the suggested maple soy dressing)
