  • 1 cup brown rice
  • 1/2 cup black beans
  • 1/4 cup cheddar cheese shredded (or mexican blend)
  • 1/2 avocado
  • 1/4 cup frozen corn
  • 2 tbsp salsa


  • Cook rice per package directions or in rice cooker.
  • Microwave canned black beans and corn until warm or on stove top.
  • Assemble bowl starting with rice and beans and then adding toppings.
