Simple Grilled Salmon, Roasted Beets, Brown and Wild Rice

Ingredients

Simple Grilled Salmon

  • 4 salmon fillet 4-6 oz each
  • salt to taste
  • pepper to taste
  • 1 lemon

Roasted Beets

  • 3 beet medium, peeled and cut into cubes
  • 2 Tbsp extra virgin olive oil
  • 2 tsp kosher salt

Brown and Wild Rice

  • 1/2 cup wild rice
  • 1/2 cup brown rice
  • 2 cups vegetable broth with no sugar listed in ingredients

Instructions

Simple Grilled Salmon

  • Preheat grill. Spray grates with cooking spray. Sprinkle salmon with salt and pepper, both sides. Grill over med-low heat 4 min per side or until fish is opaque and flakes easily. Squirt with fresh lemon juice.

Roasted Beets

  • Preheat oven to 400. Toss beet cubes in oil in a medium bowl, until well coated. Arrange in single layer on baking sheet. Sprinkle with salt. Bake at 400 for 20-30 min or until soft and beginning to brown on the edges.

Brown and Wild Rice

  • Combine all ingredients in a medium saucepan. Bring to a boil. Reduce heat, cover, and simmer 20 min or until all liquid is absorbed. Serve with Braggs Liquid Aminos, if desired.
