Low Carb Coleslaw

  • 6 cups coleslaw mix 12-14 oz. package (see notes)
  • 1/3 cup mayonnaise green tier version (see notes)
  • 3 Tbsp apple cider vinegar raw, unfiltered
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • stevia drops 6-10 drops, such as sweet leaf


  • Add coleslaw mix to a large bowl
  • In a medium bow, whisk together mayo, vinegar, stevia, salt, and pepper.
  • Pour dressing over coleslaw and mix well. Refrigerate for at least one hour to allow flavors to combine.


We used a 14 oz. package of coleslaw mix that has green cabbage, red cabbage, and carrots. It has about 6 cups total in the package and that was perfect.
We used Primal Kitchen brand mayonnaise which is green tier.
