1/2lbwhole grain penne use 100% whole grain gluten free if needed
1Tbspextra virgin olive oil
2Tbspbottled minced garlic
2Tbsponiondiced
1candiced tomatoes15 oz
1/2tspdried oregano
1/2 tspdried basil
1pinchcrushed red pepperoptional
1/2tspsalt
1/4tsppepper
1cantomato paste6 oz
4ozcream cheese
7ozspinachfresh
1/4cupparmesan cheesegrated
Instructions
Bring pot of water to a boil. Add pasta. Cook 8 minutes or to desired doneness.
While pasta is cooking, heat oil in a large skillet over medium heat. Add onion and garlic. Saute 1 minute. Stir in tomatoes, oregano, basil, crushed red pepper (if using), salt, and pepper. Stir well and bring to a boil. reduce heat; simmer 5 minutes.
Stir in cream cheese until melted and incorporated. Stir in spinach until wilted. Stir in pasta. Serve with parmesan cheese, if desired.
