4ozVietnamese brown rice noodlessuch as Star Anise Foods (see notes)
2boneless, skinless chicken breastcooked and shredded
1red bell pepperthinly sliced
1lbbaby bok choyhalved and chopped
1carrotshredded
6green onionthinly sliced
1/2bunchcilantrofinely chopped
Bragg Liquid Aminosor hot sauce, optional, for topping
Instructions
Bring broth to a boil. Add noodles. Cook 1 minute (see notes), then remove noodles with a slotted spoon or pasta server. Distribute noodles evenly among 4 bowls.
Top with chicken. Add bell pepper, bok choy, and carrot to the boiling water. Boil 2 minutes. Remove vegetables from broth, and add to chicken and noodles in bowls. Top with broth, green onions, and cilantro. Top with condiments, if desired.
Notes
NOTE: If you can't find brown rice pho noodles such as Star Anise brand, you can use brown rice spaghetti style noodles and this will still be amazing. Just note that the cooking time on spaghetti style noodles is more like 7 minutes.
