Banana Nut Granola

Ingredients

  • 2 cups oats
  • 1/2 cup cashews coarsely chopped
  • 1/2 cup pepitas
  • 1/2 cup dried unsweetened bananas chopped
  • 1/2 cup sunflower seeds
  • 2 Tbsp pure maple syrup
  • 2 Tbsp natural peanut butter melted
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 300 F.
  • Mix all ingredients and spread onto a parchment-lined baking sheet. Bake at 300 for 10 minutes. Allow to cool, then store in an airtight container for up to two weeks.
