Combine flour, baking soda, baking powder, and salt in a medium bowl. Combine bananas, butter, egg, and honey in a separate bowl. Add wet ingredients to dry ingredients. Fold just until moistened. Add batter to a greased muffin pan, approximately 3 tablespoons of batter per well.
Combine Crumb Topping ingredients. Sprinkle crumb topping over batter (about 1-2 teaspoons per well). Bake at 375 for 18-22 minutes or until toothpick inserted in center comes out clean. Allow to cool completely. Freeze any uneaten muffins for later.
