Italian Kale Salad

- 1 bunch kale stems and ribs removed, chopped
- 1 cup grape tomatoes chopped
- 3/4 cup marinated artichokes drained and chopped (about a half a can)
- 1 cup Kalamata olives sliced
- 1/4 cup mozzarella grated
Dressing
- 1/4 cup extra virgin olive oil
- 2 Tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp oregano dried, or 1 Tbsp fresh
- salt to taste
- pepper to taste
