Heat oven to 375. Spray individual tart pans with cooking spray.
Mix baking mix, coconut sugar, butter, and 3 oz cream cheese until soft dough forms. Press dough on bottom and up sides of 6 tart pans. Place prepared tart pans on a baking sheet. Bake at 375 for 9-11 min or until light brown. Cool completely.
Mix remaining cream cheese, honey, and sour cream until smooth. (I used an electric mixer fitted with a beater, on medium speed. Filling mixed by hand might not be as smooth.)
Spoon filling into cooled tart shells. Top with berries. Serve immediately or store covered in refrigerator.
