- 2 cups Arugula or other greens
- 1 peach cut into wedges
- 1/4 red onion sliced
- 1/4 cup gorgonzola or blue cheese
- 2 Tbsp walnuts
- 1 Tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp extra virgin olive oil
- salt to taste
- pepper to taste
Wisk together vinegar, mustard, EVOO
Combine arugula, peach wedges, onion, cheese and walnuts
Drizzle with dressing
